Healthy eating is the bane of my life... I'm always on and off diets trying to lose weight and I seem to go round in circles. However, meal prepping is something I have become quite good at. This is always a job for a Sunday as I prep my lunches for the following week at work.
I always take a salad to work for my lunch but found that when I got to it at lunch time it was always soggy and disgusting (and just damn right awful)! I was determined to find a way to banish soggy salads so I did some research (a google search) and found some rather useful tips.
1. Cut up your lettuce and wash it in a colander (it's super important to separate lettuce with the rest of your salad).
Once washed, tip out onto some kitchen roll (make sure its as spaced out as possible) and leave to dry.
2. Cut up the rest of your salad and wash in the colander. I like to have cucumber, spring onions, tomatoes, peppers and gherkins in my salad (sometimes I had carrots too).
Once washed, tip it out onto a new bit of kitchen roll. Don't mix the wet lettuce and the rest of the wet salad.
3. Take some more kitchen roll and dab the lettuce and the other salad until it's as dry as possible.
4. Once the salad is as dry as possible, line your Tupperware with more kitchen roll.
Put your lettuce in first and then the rest of your salad on top. It's really important that tor salad is as DRY as possible before sealing the lid.
I usually prepare around 4-5 salads at a time!
The key is to ensure your salad is as dry as possible before you put it into the Tupperware and also that your Tupperware is lined with kitchen roll (this will catch any remaining moisture from the salad). I usually the salads with the lids off for around an hour before refrigerating.
I like my chicken salads, one chicken breast will be cut up and separated into two containers. I therefore use two chicken breasts to make 4 salads and then perhaps a ham salad!
For those of you following Weight Watchers, this means that every single salad is 1sp!
